  • 1 lb. ground beef – 93% lean
  • 1 lb. ground Turkey breast
  • 3 cups chopped yellow onion
  • 1 large green bell pepper
  • 4 cloves garlic – thinly slivered
  • 1 jalapeno pepper – finely chopped
  • 1 6 oz. can tomato paste
  • 2 28 oz. cans petite cut tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon 1 ground cumin
  • 3 bay leaves
  • 2 15 oz. cans dark red kidney beans
  • 1 15 oz. can light red kidney beans
  • 1 15 oz. can black beans
  • 1 teaspoon salt
  • 2 tablespoons canola oil

Instructions

  1. In a large pot place one tablespoon of oil and brown the beef and turkey together under medium-high heat. Use the back of a large spoon to break up the chunks of meat. Once the meat starts to brown, add one tablespoon of chili powder and mix well. Remove the meat from the pot and drain off the fat. Add 1 tablespoon of oil and the onions to the pot. Sauté for about 5 minutes until the onions begin to be translucent. Add garlic and cook for about 2 minutes. Add green pepper and jalapeno and cook for another 5 minutes. Return the meat to the pot. Add tomato paste, one teaspoon cumin, and one tablespoon of chili powder and mix well. Add 2 cans petite diced tomatoes, 1 teaspoon salt, bay leaves, and the beans. Simmer for 30-45 minutes on medium low. Add more chili powder as desired. Click for larger image

Nothing beats chili on a cold winter day. By using low-fat meats and draining the fat this becomes a high protein meal. Chili freezes well so don’t worry if this makes more than needed.
