Salmon with Romesco Sauce over Kale

  • 4 (4-oz.) skinned salmon filets
  • 1 ½ large roasted red bell peppers (from jar or can)
  • ⅓ cup tomato puree
  • 1 garlic clove - crushed
  • ⅓ cup slivered almonds – preferably toasted
  • 2 tablespoons chopped parsley
  • 2 tablespoons red wine vinegar
  • 1 tablespoon paprika
  • ½ tablespoon crushed red pepper flakes
  • ¼ cup extra-virgin olive oil

Sautéed Kale:

  • 3 cups chopped kale
  • 1 garlic clove – crushed
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar


  1. Prepare the grill. Brush salmon with olive oil and grill for approximately 5 minutes on each side – cook to your preference. For the Romesco sauce, combine the 9 ingredients in a food processor until finely chopped. This can be made up to a week ahead and kept covered in the refrigerator. In a large skillet place olive oil and lightly sauté the garlic (30 seconds). Add kale and cook until beginning to wilt. Add vinegar, toss and then add salt and pepper to taste.
