Ingredients
Sautéed Kale:
- 3 cups chopped kale
- 1 garlic clove – crushed
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
Instructions
- Prepare the grill. Brush salmon with olive oil and grill for approximately 5 minutes on each side – cook to your preference. For the Romesco sauce, combine the 9 ingredients in a food processor until finely chopped. This can be made up to a week ahead and kept covered in the refrigerator. In a large skillet place olive oil and lightly sauté the garlic (30 seconds). Add kale and cook until beginning to wilt. Add vinegar, toss and then add salt and pepper to taste. Serve the salmon, covered with Romesco sauce, atop the sautéed kale. Click for larger image
