Salmon with Olives and Tomatoes

  • 6 pieces of salmon (about 4 oz. each)
  • 1 tablespoon olive oil
  • 3 tablespoons shallots cut in 1/4 inch strips
  • 3 cups cherry tomatoes cut in half
  • 3 tablespoons seeded Kalamata olives, cut in half
  • 3 tablespoons capers
  • ¼ cup dry white wine


  1. Preheat oven to 400°F. Place salmon in a 13” by 9” shallow baking dish lined with non-stick aluminum foil. Sprinkle salmon with salt and pepper and place in the oven for approximately 12 minutes or to desired doneness. Cook shallots in olive oil on medium high for about 2 minutes. Add wine and cook for another 2 minutes. Add the tomatoes, olives and capers and toss until warmed. Pour the tomato mixture over salmon and serve. Click for larger image
