Roasted Sweet Potato

  • 4 cups sweet potatoes cut in ½ inch cubes (about 2 large potatoes)
  • 3 tablespoons orange juice
  • 1 ½ tablespoon olive oil
  • 1 teaspoon honey
  • ¼ teaspoon cinnamon
  • 1 tablespoon chopped cilantro (optional)


  1. Pre-heat the oven to 425°F. Line a baking pan with non-stick foil. Peel the sweet potatoes and cut into ½ inch pieces. Set aside. In a small bowl mix 2 tablespoons orange juice, 1-tablespoon olive oil, honey and cinnamon. Toss the potatoes with the orange juice mixture and place on the baking pan. Bake in the oven for about 20 minutes, until the potatoes are soft and the outside almost caramelized. Toss with ½ tablespoon olive oil, one tablespoon of orange juice, cilantro and serve. The sweet potatoes can be made ahead of time and kept warm in the oven before being tossed with the additional orange juice, oil and cilantro.
