Lentils with Sweet Potatoes

  • 1 cup white onion chopped (about 1/2 a small onion)
  • 2 cups sweet potatoes cut into 1/2 inch cubes
  • 2 cups cooked lentils
  • ½ cup chicken or vegetable both
  • 2 teaspoons balsamic vinegar
  • 1 tablespoon honey


  1. In a shallow saucepan, sauté onions with a tablespoon of olive oil for about 2 minutes. Add sweet potatoes and cook for an additional 3 minutes – stirring frequently. Pour in 1/2 cup of broth and bring to a boil for 5 minutes. Add the cooked lentils and heat through. Click for larger image
