  • 1 ½ cups farro
  • ½ cup finely chopped red bell pepper
  • ⅓ cup finely chopped carrot
  • ¼ cup finely chopped green onion
  • 2 tablespoons crumbled Feta cheese
  • 3 tablespoons finely chopped parsley
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon flax seed oil
  • 1 ½ tablespoons balsamic vinegar
  • 1 clove garlic, minced

Instructions

  1. Prepare Farro according to package directions. Mix with the next 5 ingredients. In a separate small bowl combine the olive oil and the next 3 ingredients. Mix the Farro mixture with the dressing, season with salt and pepper, and serve. Click for larger image
