Crispy Flounder with Peach Hot Pepper Jelly
Introducing our delightful Peach Glazed Flounder recipe! This dish combines the delicate flavor of flounder with the sweet and tangy goodness of a peach and red pepper jelly glaze. With a crispy panko breadcrumb coating and a perfect balance of flavors, this recipe is sure to elevate your dining experience.

Ingredients:

  • 2  flounder filets
  • ¾  cup milk
  • ½ cup panko bread crumbs
  • 1 egg
  • 1 peach - chopped in ½ inch bits
  • ½ cup red pepper jelly
  • salt and pepper to taste

Directions:

  1. Soak the flounder filets in milk for about 30 minutes. 
  2. Meanwhile, chop the peach and heat it with the pepper jelly and ¼ cup of water until the jelly melts.
  3. Place flour in one plate, the panko in another. In a shallow bowl make an egg wash with one egg and ¼ cup of milk. Shake the milk off the flounder and sprinkle with salt and pepper. Dredge the flounder through the flour, then the egg wash and finally the panko breadcrumbs.
  4. In a large skillet place oil and heat to medium-high. Cook the flounder for about 5 minutes on each side (depending on the thickness of the filet). Top with the peach-jelly mixture and serve.
