  • 3 cups whole milk
  • ½ cup organic blue agave syrup
  • 2 teaspoons vanilla extract
  • ¼ cup cold water
  • 2 packets of unflavored gelatin
  • ½ cup blueberries
  • ½ cup strawberries – chopped
  • ¼ cup Moscato wine
  • 1 teaspoon honey

Instructions

  1. In a cup pour ¼ cup cold water and sprinkle the gelatin over it. Let stand for 10 minutes – until gelatin softens. Heat this over an inch of boiling water or in the microwave for 20-30 seconds and mix until the gelatin dissolves. Blend together ½ cup of milk and the blueberries. Strain through a sieve, throw away the solids and keep the liquid. Heat 2 ½ cups of milk and agave – do not boil. Take off the heat; add the gelatin and the blueberry-milk mixture. Mix well and divide among 6 small custard bowls.Place in refrigerator for 8 hours or overnight. In a blender mix strawberries, wine, and honey. Flip the panna cotta bowl over a plate using a knife at the edge to separate, top with strawberry coulis and fresh berries. Click for larger image

Notes

Most of this can be made the day before. To make the panna cotta separate from the bowl more easily, lightly spray the bowl with cooking spraying before pouring the panna cotta mixture.
