  • 4 cups blueberries
  • ⅓ cup water
  • ⅓ cup organic blue Agave syrup
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • ¾ cup rolled oats
  • ¾ cup all-purpose flour
  • ⅓ cup brown sugar
  • ¼ cup sliced almonds
  • 4 tablespoons melted unsalted butter
  • ¼ cup hot water
  • ¼ teaspoon salt


  1. Preheat oven to 375°F. Combine blueberries and the next five ingredients in a bowl. Stir and let stand for 10 minutes. Coat a 9x9 inch glass baking dish with cooking spray, pour the mixture in it, and bake at 375 oF for 30 minutes. Meanwhile mix the next 7 ingredients, forming a clumpy mixture. Once the blueberry mixture is thickened, remove it from the oven and spread the oats’ mixture on top. Return it to the oven and bake for an additional 15 minutes – until the top is golden brown. Remove from the over, let stand for 10 minutes and serve with light ice cream, frozen yogurt, or low-fat whipped topping.
