Beet and Orange Spinach Salad

  • 6 cups baby spinach, washed
  • 6 medium beets or 3 large beets
  • 1 orange - peeled and chopped into one inch pieces
  • 5 oz goat cheese
  • 6 tablespoons pistachios

Dressing:

  • ½ teaspoon orange zest
  • 3 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon white wine vinegar
  • 2 tablespoons chopped shallots
  • ¼ teaspoon ground pepper
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 400°F. Wash the beats and remove stems and roots. Wrap tightly in aluminum foil and place in the oven for about 25 minutes. Once the beets are tender they are ready. Let them cool and then peel and cut into bite-sized pieces. Mix the ingredients for the dressing while the beets are roasting. Plate the salads with spinach, orange slices, beet slices, about a tablespoon of goat cheese. Place about 1-2 tablespoons of dressing on each salad. Top with about one tablespoon of spinach. Click here for larger image
