  • 1 lbs pork tenderloin, trimmed and cut into thin
  • 1 cup red/yellow bell pepper cut into ½ inch pieces
  • 8 oz. green beans
  • 2 cloves garlic – minced
  • 1 tablespoon ginger - grated
  • 1 orange – cut into 1/2 inch pieces
  • 1 teaspoon orange zest
  • 5 tablespoons low-sodium soy sauce
  • 1 tablespoon honey
  • ¼ teaspoon red pepper flakes
  • 2 tablespoons canola oil
  • 1 oz. lightly salted peanuts

Instructions

  1. In a small bowl mix together garlic, ginger, orange zest, honey, pepper flakes, and 3 tablespoons of soy sauce. Set aside. Boil or steam green beans for 2-3 minutes. Make sure they do not go limp. Cut them in 1 inch pieces. Combine the pork with 2 tablespoons of soy sauce and stir-fry in batches. Set aside. Stir-fry the bell pepper for 2 minutes. Add the green beans and pork. Bring the heat to medium low and add the ginger/soy sauce mixture. Stir together for about 1-2 minutes. Serve over steamed brown rice and top with orange pieces and about 1 tablespoon of peanuts per serving. Click for larger image
