Orecchiette with Sausage and Kale

  • ½ cup thinly sliced shallots
  • 2 cups chopped kale  
  • 1 clove garlic – minced
  • 1 package 16 oz. chicken sausage – casing removed
  • 1 8 oz. orecchiette pasta
  • 1 tablespoon olive oil


  1. Cook the pasta in salted water according to packaging. While the pasta is cooking, in a 12 inch skillet, place one table spoon of olive oil. Heat at medium and sauté the shallots and garlic for about 5 minutes. Remove the shallot/garlic mixture – set aside. Cook the chicken sausage, breaking it up with the back of a spoon into small chunks. Once the sausage is cooked, return the shallot/garlic mixture and add the kale. Mix under medium heat until the kale begins to wilt. Drain the pasta and add it to the sausage mixture. Toss well. Season as needed and serve with freshly shaved Parmesan on top. I like to use hot chicken sausage for this. It brings adequate seasoning to the dish. If using a more bland sausage, one might want to add red pepper flakes, oregano, and basil as well.
