Nana's Couscous Salad

Ingredients

  • 2 cups whole-wheat couscous
  • 1 cup green onions - chopped
  • 2 cups tomatoes – chopped
  • 2 cups cucumbers – chopped
  • 1 15 oz. can Garbanzo beans
  • 1 cup parsley - chopped
  • Dressing:

    • ¼ cup flax seed oil
    • ¼ cup olive oil
    • ½ cup lemon juice
    • 2 cloves garlic – minced
    • 1 teaspoon Dijon mustard
    • 1 teaspoon ground coriander
    • ¼ teaspoon salt
    • ¼ teaspoon pepper

    Instructions

    1. Cook couscous according to package directions. Set aside to let cool and refrigerate. Mix all the ingredients for the dressing about an hour or up to a day prior to serving. In a large bowl, mix the vegetables, couscous and beans, toss with the dressing and serve. Click for larger image

    Notes

    This is a hearty yet refreshing salad. It works well as a side for a cookout. The Flax seed oil give a nice addition of Omega-3’s with a slight nutty flavor from the oil.
