  • 1 lb white fish (cod or halibut)
  • ½ lb shrimp (fresh or frozen peeled and deveined)
  • 1 cup quick-cook (parboiled) brown rice
  • 1 onion (medium-sized and chopped)
  • 1 pepper (red, yellow, or orange)
  • 2 garlic cloves
  • ¼ cup parsley (chopped)
  • ¼ tspn saffron threads
  • 2 cups vegetable broth (low-sodium)
  • 2 cups tomatoes (chopped)
  • 1 cup frozen peas
  • 2 tbsp extra-virgin olive oil
  • 1 lemon (cut in wedges)

Instructions

  1. In a large skillet or paella pan, heat the olive oil over medium heat. Add the onion, bell pepper, and garlic, and sauté until the vegetables are softened, about 5 minutes. Stir in the brown rice, tomatoes, saffron, and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 15 minutes, covered. Add the fish fillets. Cook for another 5 minutes, and then add shrimp and peas to the pan and cook for another 5 minutes until the shrimp are cooked through and the rice has absorbed the broth. Season with salt and pepper to taste. Garnish with chopped parsley and lemon wedges. Serve warm, and enjoy this delicious, eye-healthy Spanish meal with your loved ones!
