Mahi with Citrus Shallot Vinaigrette

  • 6 4-6 ounce Mahi fillets
  • ½ cup dry white wine
  • ⅓ cup chopped shallots
  • 3 tablespoons lemon juice
  • 3 tablespoons orange juice
  • 1 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • Instructions

    1. Sprinkle fish with salt and pepper. Heat a teaspoon of olive oil over medium heat in a nonstick skillet. Cook the fish approximately 5 minutes each side – until fish flakes easily with a fork. Remove and keep warm. Add wine to the skillet and bring to boil under high heat. Boil the wine for about 2 minutes. Add the remaining ingredients and heat for another 2 minutes under medium high heat. Place fillet on a plate and top with the vinaigrette. Click for larger image

    I usually serve this with the couscous with dried fruit and walnuts. The sweet and savory is a nice combination.
