  • ½ cup organic blue agave syrup
  • 4 tablespoons unsweetened cocoa powder
  • ½ cup fat-free milk
  • 2 tablespoons butter
  • 7 tablespoons semi-sweet chocolate chips
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 egg whites

Instructions

  1. Preheat the oven to 325°F. In a medium pot mix syrup, cocoa powder, milk, and two tablespoons of chocolate chips. Heat under medium until the cocoa mixes well. Remove from heat and add butter and vanilla. Let cool for 5-10 minutes. Add flour and egg whites, beat with mixer until smooth. Spray a 9-inch round baking pan lightly with cooking spray. Place half of the cake mixture in the pan. Sprinkle 4 tablespoons of chocolate chips on top and then pour the other half of the mixture. The process of pouring the mixture will likely push the chocolate chips to the sides. Place another tablespoon of chocolate chips in the middle and gently push under the mixture. Place the pan in the pre-heated oven for about 12 minutes – until the center is set. Cool for 10 minutes. Invert on a plate and serve. Click here for larger image

Notes

Sometimes you just need chocolate! In this recipe I have used minimal butter and fat-free milk with low-glycemic Agave syrup. This is best served warm. It can be made ahead, refrigerated and the individual slices heated in the microwave prior to serving.
