Halibut with Mango Salsa

Halibut is a great fish with good flavor, nice flaky consistency, and a good amount of Omega-3. Mango is an excellent source of Vitamins A, C, and Beta-carotene.

4 4 oz. portions of halibut.

Salsa ingredients:

  1. 1 ripe mango seeded and chopped into small pieces.
  2. 1 jalapeno seeded and chopped into small pieces.
  3. ¼ cup red onion copped
  4. 1/3 cup cilantro chopped
  5. ¼ cup fresh lime juice
  6. 2 tablespoons of extra virgin olive oil
  7. salt and pepper to taste
Mix all the ingredients listed for the salsa and set aside.
Grill the halibut, about 4 minutes per side, until the internal temperature measures 145 degrees F.
Plate halibut, top with the salsa and enjoy!
