- Place the shallots, red wine vinegar, olive oil, garlic, crushed red peeper flakes and cumin in a food processor. Chop a few times to mix the ingredients and cut the shallots to about ¼ inch pieces. Add the cilantro and spinach and chopped until a the cut pieces of cilantro are about ¼ inches. Set aside. Trim the pork tenderloin. Marinade in two tablespoons of the chimichurri for 30 minutes. Heat the grill and cook for about 5-8 minutes on each side – until it reaches an internal temperature of 150°F. Let the pork rest off the fire for about 10 minutes – serve with the sauce on top. Notes
I like to serve this with steamed rice and crushed black beans. The chimichurri sauce can be made a day ahead and kept in the refrigerator. The chimichurri sauce is also excellent on grilled fish, chicken, or beef.
