  • 2 15 oz. cans black beans
  • 1 tablespoons canola oil
  • 4 cloves garlic- minced
  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon ground cumin
  • 2 cups low-sodium chicken broth
  • 1 tablespoon lime juice


  1. Bring to boil 2 ½ cups water with 1 tablespoon olive oil and a chicken or vegetable bouillon cube. Once the water comes to a boil remove it from heat and stir in couscous. Cover and let stand for 5 minutes. Add dried fruit, walnuts and herbs with an additional tablespoon of olive oil. Click for larger image
