  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup brown sugar
  • 4 tablespoons softened unsalted butter
  • 3 bananas ripe and mashed
  • ½ cup fat-free Greek yogurt
  • 1 teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon
  • 2 tablspoons ground cinnamon

Instructions

  1. Preheat oven to 350°F. Combine flour, baking soda and salt – set aside. In a separate bowl mix sugar and then next six ingredients (through cinnamon). Beat at low until a consistent mixture is formed. Add the wet ingredients to the flour mixture and beat at low until all moistened. Add the flax seed and mix in. Place the mixture in a 8x4 inch loaf pan coated with cooking spray. Place in the oven for 35 minutes, until a toothpick placed in the center comes out dry and clean. Let it cool 10-15 minutes and then serve. Click for larger image

Notes

This recipe works best with mushy brown bananas. I keep a zip-lock bag in the freezer. When bananas get brown, I peal them and cut them into 1-inch pieces and store them in the freezer for future banana bread. Walnuts are a nice addition to the bread.
