Watermelon Salad

  • 3 cups watermelon cut in 1-inch cubes
  • 1 cup Jicama peeled and cut in 1 inch by 1/4 inch strips
  • 1 cup Kale, center stem removed, cut in 1/4 inch strips
  • 2 tablespoons fresh mint - chopped
  • 2 tablespoons crumbled Feta cheese


  • ⅓ cup orange juice
  • ¼ cup lime juice
  • 1 teaspoon finely chopped fresh orange zest
  • 2 tablespoons flax seed oil
  • ⅛ teaspoon freshly ground pepper


  1. Mix all the dressing ingredients in a small bowl and set aside. In a large bowl combine the first four ingredients for the salad and then fold in the dressing. Let the salad sit for about 15 minutes to allow the ingredients to soak up the dressing. Divide the salad in individual plates and top each with about 2 teaspoons of Feta cheese.
